We had this for dinner tonight. I never get tired of it. It's the perfect summer meal.

Fresh Summer Pasta Sauce

4-6 fat, juicy tomatoes from the farmers' market (or home-grown, if you're one of those lucky folks), cored and coarsely chopped
2-4 cloves of fresh garlic, minced
1 cup of fresh basil leaves, chopped
2-3 tablespoons of good quality, extra-virgin olive oil
salt to taste

Combine all ingredients in a big bowl, cover and let sit at room temperature for 4 hours to let the flavors blend. Toss with hot pasta -- short shapes like penne or rotini work best -- and chopped fresh ovoline mozzarella. So easy! The raw tomatoes and garlic are mouth-wateringly delicious.
